When we think of spices, whether it’s seeds, leaves, flowers or fruits, the first thing that comes to mind is India, with all its colours, aromas and flavours. But spices are grown in countries around the world, such as Eritrea, Morocco, Madagascar, Turkey, Iran, Vietnam, Sri Lanka, Thailand and Hungary. Not to mention Italy, where use of spices took hold in Medieval times to exalt flavours, but above all to preserve foods properly and harness their healing properties.
